Roasted Carrots and Onions with Honey Balsamic Dressing

3-4 carrots, pealed and cut
2 white onions, peeled and cut in quarters
2tbs olive oil
3 tbs balsamic vinegar
3 tbs honey

Preheat oven to 350F. In a small bowl combine olive oil, balsamic vinegar and honey. Put carrots and onions in a roasting pan and drizzle vegetables and toss to coat the other ingredients. Place in oven and bake for 30-40 minutes or until vegetable are tender and golden. Serve.
